Chef's Note
For the best results, use peaches that are slightly firm to the touch; if they are too soft, they may fall apart during the searing process.

Ingredients
2 whole fresh peaches
1 tbsp unsalted butter
2 tbsp honey
1/4 tsp ground cinnamon
1/4 tsp vanilla extract
1/2 cup plain Greek yogurt
Instructions
- 1
Wash the 2 whole peaches under cold water and pat them dry with a towel.
- 2
Cut each peach in half along the natural seam, twist to open, and carefully remove the pits.
- 3
Place a medium non-stick skillet over medium heat and add 1 tbsp unsalted butter, allowing it to melt until it starts to foam.
- 4
Place the peach halves cut-side down into the hot skillet and sear them undisturbed for 4 minutes until the surface is caramelized and golden brown.
- 5
Reduce the heat to medium-low and use tongs to flip the peaches over so the skin side is down.
- 6
Drizzle 2 tbsp honey directly over the peaches, then sprinkle with 1/4 tsp ground cinnamon and 1/4 tsp vanilla extract.
- 7
Sauté for an additional 3 minutes, using a spoon to bast the peaches with the bubbling honey-butter sauce until they are tender and glazed.
- 8
Remove from heat and serve each portion with two peach halves, a dollop of 1/4 cup plain Greek yogurt, and the remaining warm glaze drizzled over the top.
