Ingredients
1 lb ground beef
1 medium yellow onion
1 medium green bell pepper
15 oz canned tomato sauce
1 cup frozen corn
1 tbsp chili powder
1 tbsp brown sugar
Instructions
- 1
Wash the 1 medium yellow onion and 1 medium green bell pepper, then finely dice both.
- 2
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat.
- 3
Add 1 lb ground beef, the diced onion, and the diced green pepper to the skillet.
- 4
Cook for 8 minutes, using a wooden spoon to break the beef into small crumbles, until the meat is fully browned and the vegetables are soft.
- 5
Drain any excess liquid or fat from the skillet.
- 6
Stir in 15 oz canned tomato sauce, 1 tbsp chili powder, 1 tbsp brown sugar, 1/2 tsp salt, and 1/4 tsp black pepper until well combined.
- 7
Add 1 cup frozen corn to the mixture and stir to incorporate.
- 8
Reduce the heat to medium-low and simmer for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- 9
Remove from heat and transfer exactly half of the beef and corn mixture to an airtight container to be refrigerated for Day 2 and Day 3 meals.
- 10
Serve the remaining half of the skillet mixture immediately in bowls or over bread.
