Chef's Note
To get the best sear on your steak strips, make sure the pan is very hot before adding the meat and don't crowd the pan; if necessary, sear in two batches.

Ingredients
1.5 lbs top sirloin steak
1/2 lb fresh green beans
4 tbsp unsalted butter
3 cloves garlic
1 tbsp fresh parsley
1 tsp dried thyme
Instructions
- 1
Wash 1/2 lb fresh green beans and trim the stem ends.
- 2
Slice 1.5 lbs top sirloin steak into strips about 1-inch thick. Season the strips evenly with salt, black pepper, and 1 tsp dried thyme.
- 3
Peel and mince 3 cloves of garlic. Finely chop 1 tbsp fresh parsley.
- 4
In a small bowl, use a fork to mash 4 tbsp room-temperature unsalted butter with the minced garlic and chopped parsley until well combined.
- 5
Bring 2 cups of water to a boil in a medium saucepan. Add the green beans and cook for 4 minutes until tender but still bright green. Drain the water and set the beans aside.
- 6
Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- 7
Add the steak strips to the hot skillet in a single layer. Sear for 2 to 3 minutes per side until a brown crust forms.
- 8
Reduce the heat to low. Add the cooked green beans to the skillet along with 1 tbsp of the prepared garlic butter. Toss for 1 minute to coat the beans and steak in the melting butter.
- 9
Remove from heat and top the steak strips with the remaining 3 tbsp of garlic butter to melt over the meat before serving. Save half the steak for lunch tomorrow.
