Chef's Note
When reheating in the microwave, using a damp paper towel is the secret to keeping the tortilla soft rather than rubbery.

Ingredients
2 large flour tortillas
6 oz chicken breast
1/2 cup black beans
1 cup cheddar cheese
1/2 whole red bell pepper
1 medium tomato
1/4 tsp dried oregano
2 tbsp sour cream
Instructions
- 1
Retrieve the leftover quesadillas from the refrigerator, which consist of 2 large flour tortillas filled with 6 oz of sliced chicken breast, 1/2 cup of black beans, 1 cup of shredded cheddar cheese, and 1/2 of a washed and diced red bell pepper.
- 2
While the quesadillas are still cold, wash and dice 1 medium tomato and mix it with 1/4 tsp of dried oregano in a small bowl to create a fresh topping.
- 3
Place the assembled leftover quesadillas onto a microwave-safe plate in a single layer.
- 4
Dampen a paper towel with water and wring it out so it is just moist, then drape it over the quesadillas to keep the 2 large flour tortillas soft during reheating.
- 5
Microwave on high power for 2 minutes until the 1 cup of cheddar cheese is completely melted and the 6 oz of chicken and 1/2 cup of black beans are steaming hot.
- 6
Remove the plate from the microwave and let the quesadillas rest for 1 minute before slicing into wedges.
- 7
Serve the warm quesadillas immediately with the diced 1 medium tomato and 1/4 tsp dried oregano mixture and 2 tbsp of sour cream on the side.
