Chef's Note
The splash of water is the secret to reviving leftover pasta; it creates just enough steam to loosen the starches and make the sauce taste freshly made.

Ingredients
8 oz penne pasta
1 cup tomato sauce
2 tbsp heavy cream
1 cup baby spinach
2 tbsp parmisan cheese
0.5 tsp dried oregano
0.25 tsp red pepper flakes
Instructions
- 1
Wash 1 cup baby spinach under cold water and roughly chop it into small pieces.
- 2
Place 8 oz of leftover penne pasta and 1 cup of tomato sauce into a large microwave-safe glass bowl.
- 3
Add 1 tbsp of water and 2 tbsp of heavy cream to the bowl to help restore the sauce's creamy texture and prevent the pasta from drying out.
- 4
Cover the bowl loosely with a microwave-safe lid or a damp paper towel to trap steam during the reheating process.
- 5
Microwave on high for 2 minutes, then carefully remove the bowl and stir the pasta to ensure even heating.
- 6
Fold the chopped baby spinach, 0.5 tsp dried oregano, and 0.25 tsp red pepper flakes into the warm pasta mixture.
- 7
Return the bowl to the microwave and heat for an additional 60 to 90 seconds until the spinach is completely wilted and the sauce is bubbling.
- 8
Divide the pasta between two bowls and sprinkle 1 tbsp of parmesan cheese and a pinch of black pepper over each serving before eating.
