Chef's Note

Toasting your own granola takes less than 15 minutes and provides a much better crunch and flavor than store-bought versions. If you prefer a clumpier granola, press the mixture down firmly on the sheet pan before baking and do not stir it until it has cooled completely.

Ingredients
  • 2.5 cups Greek yogurt (plain, 2%)

  • 2/3 cup old fashioned rolled oats

  • 2 tablespoons honey

  • 1/4 cup raw walnut halves

  • 1 cup fresh blueberries

  • 1 whole banana

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon vanilla extract

Instructions
  • 1

Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper.

  • 2

In a mixing bowl, combine 2/3 cup rolled oats, 1/4 cup raw walnut halves (roughly chopped), 1/2 teaspoon ground cinnamon, and 1/2 teaspoon vanilla extract.

  • 3

Add 1 tablespoon of honey to the oat mixture and stir thoroughly until the oats and nuts are evenly coated.

  • 4

Spread the granola mixture in a single layer on the prepared baking sheet and bake for 12-15 minutes, tossing halfway through, until golden brown and fragrant.

  • 5

While the granola toasts, wash 1 cup of blueberries and pat them dry. Peel and slice 1 whole banana into 1/4-inch rounds.

  • 6

In two serving bowls, divide 2.5 cups of plain Greek yogurt (1.25 cups per bowl).

  • 7

Remove the granola from the oven and let it cool for 2 minutes to crisp up.

  • 8

Top each bowl of yogurt with half of the toasted granola, half of the blueberries, and half of the sliced banana.

  • 9

Drizzle the remaining 1 tablespoon of honey (1/2 tablespoon per bowl) over the top of the fruit and granola layers before serving.
