Chef's Note
Mixing protein powder directly into the peanut butter with a touch of water creates a decadent, mousse-like spread that helps you hit your protein goals without making the toast feel dry.

Ingredients
170 g sourdough bread
4 tbsp creamy peanut butter
1 large banana
44 g vanilla whey protein powder
2 tsp honey
2 tsp hemp hearts
1/2 tsp ground cinnamon
Instructions
- 1
Place a large non-stick skillet over medium heat on the stovetop.
- 2
Place 170g of sourdough bread (approximately 4 slices) into the dry skillet and toast for 2-3 minutes per side until the edges are golden brown and the surface is crisp.
- 3
While the bread is toasting, peel 1 large banana and use a chef's knife to slice it into even 1/4-inch thick rounds.
- 4
In a small mixing bowl, combine 4 tbsp creamy peanut butter and 44g vanilla whey protein powder. Add 2 tbsp of water and whisk vigorously until the mixture emulsifies into a smooth, thick, high-protein cream.
- 5
Remove the toasted sourdough slices from the skillet and place them on two serving plates.
- 6
Evenly divide and spread the protein-peanut butter mixture across the 4 slices of toast, using a butter knife to create an even layer.
- 7
Arrange the sliced banana rounds over the peanut butter spread on each slice of toast.
- 8
Drizzle 1 tsp of honey over each serving (2 slices per person).
- 9
Finish by sprinkling 1 tsp of hemp hearts and 1/4 tsp of ground cinnamon over each serving for added texture and flavor.
