Chef's Note
The addition of chicken broth is the secret to reviving Day 3 pasta; it creates enough steam to soften the shells without overcooking them into mush.

Ingredients
6 oz leftover italian sausage
3 cups leftover pasta shells
1 cup leftover spinach
3 cloves garlic
1 cup crushed tomatoes
1/4 cup chicken broth
5 tbsp parmesan cheese
1/2 tsp red pepper flakes
5 leaves fresh basil
1 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper
Instructions
- 1
Slice 6 oz of leftover italian sausage into 1/2-inch thick rounds and set aside.
- 2
Peel and mince 3 cloves of garlic.
- 3
In a large skillet, heat 1 tsp olive oil over medium heat.
- 4
Add the minced 3 cloves of garlic and 1/2 tsp red pepper flakes to the skillet and sauté for 1 minute until fragrant.
- 5
Pour in 1 cup crushed tomatoes and 1/4 cup chicken broth, stirring to combine with the aromatics.
- 6
Season the sauce with 1/4 tsp salt and 1/4 tsp black pepper, then bring to a gentle simmer for 4 minutes.
- 7
Add the sliced 6 oz leftover italian sausage and 3 cups leftover pasta shells to the skillet.
- 8
Stir in 1 cup leftover spinach and toss everything gently to ensure the pasta is well-coated in the tomato base.
- 9
Cook for 5 minutes, stirring occasionally, until the sausage and pasta are heated through and the sauce has thickened slightly.
- 10
Remove from heat, stir in 5 tbsp parmesan cheese until melted, and garnish with 5 torn leaves of fresh basil before serving.
