Ingredients
  • 2 medium Sweet potatoes

  • 8 oz Ground turkey

  • 1 cup Broccoli florets

  • 1/2 cup Shredded cheddar cheese

  • 1/2 cup Tomato sauce

  • 1 tbsp Brown sugar

Instructions
  • 1

Scrub 2 medium sweet potatoes under water and prick them several times with a fork to allow steam to escape during cooking.

  • 2

Place the sweet potatoes on a microwave-safe plate and microwave on high for 8-10 minutes, turning them halfway through, until they are soft when squeezed.

  • 3

While the potatoes cook, place 8 oz ground turkey (repurposed from Day 5) into a small skillet over medium heat.

  • 4

Add 1/2 cup tomato sauce, 1 tbsp brown sugar, and a pinch of salt and pepper to the skillet with the turkey.

  • 5

Stir the turkey mixture frequently for 4-5 minutes until the sauce is bubbling and the meat is thoroughly heated through.

  • 6

Place 1 cup broccoli florets (repurposed from Day 5) in a microwave-safe bowl with 1 tablespoon of water; cover and microwave for 90 seconds until hot.

  • 7

Carefully slice the cooked sweet potatoes open lengthwise and fluff the orange flesh with a fork.

  • 8

Divide the Sloppy Joe turkey mixture evenly between the two potatoes, pouring it directly into the center.

  • 9

Top each potato with 1/4 cup shredded cheddar cheese and the warmed broccoli florets while the steam from the potato melts the cheese.

  • 10

Serve immediately while the potatoes are hot and the cheese is gooey.
