Chef's Note
To make the broccoli even better, don't crowd the pan! Giving the florets space ensures they roast and crisp up rather than steaming.

Ingredients
2 lbs ground turkey
1 large yellow onion
15 oz sloppy joe sauce
2 count hamburger buns
12 oz broccoli florets
Instructions
- 1
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2
Wash 12 oz of broccoli florets and pat them dry. Spread them on the baking sheet, toss with 1 tbsp olive oil, a pinch of salt, and a pinch of black pepper. Roast in the oven for 15-18 minutes until the edges are slightly charred.
- 3
While the broccoli roasts, peel and finely dice 1 large yellow onion.
- 4
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the diced yellow onion and sauté for 3-4 minutes until translucent and soft.
- 5
Add 2 lbs of raw ground turkey to the skillet. Cook for 7-8 minutes, using a wooden spoon to break the meat into small crumbles, until it is fully browned and no longer pink.
- 6
Using a slotted spoon, remove exactly half of the cooked turkey and onion mixture (about 1 lb) from the skillet. Transfer this portion to an airtight container and refrigerate once cooled to use for tomorrow's meal.
- 7
Pour 15 oz of sloppy joe sauce into the skillet with the remaining turkey and onions. Reduce heat to medium-low and simmer for 5-7 minutes, stirring occasionally, until the sauce has thickened and coated the meat thoroughly.
- 8
Split 2 hamburger buns and lightly toast them in a separate dry pan or toaster until golden brown.
- 9
Spoon the turkey mixture onto the toasted buns and serve immediately alongside the roasted broccoli.
