This dish is perfect for batch preparation! You can multiply the ingredients by five, bake it in a large 9x13 pan for the same 45 minutes, and then slice it into individual portions to reheat in the microwave for 60 seconds throughout the week.

Preheat your oven to 350°F (175°C) and lightly coat a small individual oven-safe casserole dish with a small amount of neutral cooking oil.

Using a knife, cut 2 slices of sprouted grain bread into 1-inch cubes and place them into the prepared casserole dish.

Wash, core, and dice 1/2 of a medium apple into small 1/2-inch pieces, then scatter them evenly among the bread cubes.

In a small mixing bowl, whisk together 1/2 cup liquid egg whites, 20 grams vanilla whey protein powder, and 1 tsp ground cinnamon until the powder is fully dissolved and the mixture is smooth.

Pour the egg white mixture over the bread and apples in the dish, pressing down lightly with a spoon to ensure all bread cubes are submerged and soaking up the liquid.

Using your hands, crush 2 tbsp walnut halves into smaller pieces and sprinkle them over the top of the mixture.

Place the dish in the center of the oven and bake for 45 minutes, or until the center is set and the top is golden brown and slightly crisp.
