This recipe is designed to be batch-prepped. You can multiply the ingredients by the number of days you need and bake them in a larger casserole dish for the same 45 minutes. It reheats beautifully in the microwave for 60-90 seconds.

1.5 slices sprouted grain bread
1/2 cup egg whites
1/2 cup non-fat plain Greek yogurt
1/4 medium red apple
18 g raw walnuts
2 tbsp whole milk
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg

Preheat your oven to 350°F (175°C) and lightly coat a small individual-sized baking dish with cooking spray.

Cut 1.5 slices of sprouted grain bread into 1-inch cubes and place them into the baking dish.

Wash, core, and dice 1/4 of a medium red apple into small 1/2-inch pieces, then scatter them over the bread cubes.

In a small bowl, whisk together 1/2 cup egg whites, 1/2 cup non-fat plain Greek yogurt, 2 tbsp whole milk, 1/2 tsp ground cinnamon, and 1/8 tsp ground nutmeg until the mixture is smooth.

Pour the liquid mixture over the bread and apples in the dish. Use a spoon to gently press the bread down so it absorbs the liquid evenly.

Roughly chop 18g of raw walnuts and sprinkle them over the top of the bread mixture.

Place the dish in the oven and bake for 45 minutes until the center is firm to the touch and the top is golden brown.
