Place 1.6 oz beef eye of round in the freezer for 15 minutes to firm up, then slice it against the grain into paper-thin strips (about 1/8 inch thick).

In a small bowl, whisk together 1 tbsp soy sauce, 1.2 tbsp honey, 1/4 tsp liquid smoke, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp smoked paprika, and 1 pinch cayenne pepper to create the jerky marinade.

Submerge the beef strips in the marinade, ensuring every piece is coated, and let sit at room temperature for 15 minutes while you prepare the other components.

Prepare the quick-pickled vegetables: Wash and thinly slice 0.5 Persian cucumber and 2 red radishes into rounds. In a small jar, combine 2 tbsp rice vinegar, 1 tsp maple syrup, 0.5 tsp yellow mustard seeds, and 0.5 inch of peeled, grated fresh ginger. Add the vegetables to the brine and set aside.

Bring a small pot of water to a boil. Carefully lower 1 large raw egg into the water and boil for 7 minutes for a medium-hard yolk. Immediately transfer the egg to a bowl of ice water for 5 minutes, then peel and slice in half lengthwise.

Preheat your oven to 300°F (150°C). Arrange the marinated beef strips in a single layer on a wire rack set over a baking sheet. Bake for 20-25 minutes, or until the beef is darkened, firm, and slightly chewy (this high-temp dehydration method creates 'quick jerky').

Assemble the snack plate: Arrange the warm beef jerky strips alongside the halved egg. Drain the pickled cucumbers and radishes and place them on the plate. Garnish the egg with 0.5 tsp toasted sesame seeds and 1 tsp finely chopped fresh chives, and tuck 1 sprig of fresh dill among the pickles for aroma.
