Chef's Note
Toasting the oats is the secret to a professional-grade smoothie; it transforms the flavor from 'raw grain' to a deep, cookie-like nuttiness. For the best emulsion, always blend your greens with the liquid base first before adding the frozen or heavy ingredients.

Ingredients
1 cup raw rolled oats
4 tbsp raw whole almonds
2 cups fresh baby spinach
1 cup fresh blueberries
1 cup fresh raspberries
1 medium raw banana
1.5 cups plain non-fat Greek yogurt
1.25 cups skim milk
55 grams vanilla whey protein powder
2 tbsp whole flax seeds
1 tbsp raw hemp seeds
1.2 tbsp raw honey
1 tsp fresh ginger root
0.5 pod vanilla bean pod
0.5 tsp ground cinnamon
Instructions
- 1
Place a dry skillet over medium-low heat. Add 1 cup raw rolled oats and 0.5 tsp ground cinnamon. Toast for 5-7 minutes, stirring constantly, until the oats are golden brown and smell intensely nutty. Remove from heat and set aside to cool.
- 2
Place 2 tbsp whole flax seeds into a clean spice grinder or small blender cup. Pulse until finely ground into a meal; this ensures maximum nutrient absorption and a smoother texture.
- 3
Using a paring knife, peel a small section of fresh ginger root and grate 1 tsp using a microplane. Set aside.
- 4
Lay 0.5 vanilla bean pod on a cutting board. Carefully split it lengthwise and use the back of the knife to scrape out the aromatic seeds. Discard the woody pod or save for another use.
- 5
Thoroughly wash 2 cups fresh baby spinach, 1 cup fresh blueberries, and 1 cup fresh raspberries in cold water. Pat the spinach dry with a clean towel to prevent excess water from diluting the smoothie.
- 6
In a high-speed blender, combine 1.25 cups skim milk, 1.5 cups plain non-fat Greek yogurt, and 55 grams vanilla whey protein powder. Blend on low for 15 seconds to create a smooth liquid base.
- 7
Add the 2 cups washed baby spinach, the grated 1 tsp ginger, and the scraped vanilla bean seeds to the blender. Increase speed to high and blend for 30 seconds to fully emulsify the greens into the liquid.
- 8
Peel 1 medium raw banana and add it to the blender along with the 1 cup blueberries, 1 cup raspberries, 4 tbsp raw whole almonds, 1 tbsp raw hemp seeds, the ground flax meal, and the toasted cinnamon oats.
- 9
Blend on high for 45-60 seconds. The goal is to pulverize the almonds and toasted oats completely to achieve a thick, creamy consistency.
- 10
While the blender is running on its lowest setting during the final 30 seconds, drizzle in 1.2 tbsp raw honey. This ensures the honey is evenly distributed without sticking to the blender walls.
- 11
Pour into two large glasses and serve immediately while chilled. The toasted oats will continue to thicken the smoothie as it sits.
