For an even stickier glaze, you can turn on the broiler for the last 2 minutes of cooking, but watch closely as the honey can burn very quickly under direct high heat!

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking.

Wash 26 oz of raw chicken breast under cold water and pat thoroughly dry with paper towels.

Place the chicken on a cutting board and cut into uniform 1-inch cubes.

Peel 4 cloves of garlic and mince them as finely as possible.

In a large mixing bowl, whisk together 0.6 cups of honey, 3 tbsp of soy sauce, 1 tbsp of ginger powder, the 4 minced garlic cloves, and 4 tbsp of vegetable oil until the glaze is smooth.

Add the chicken cubes to the bowl and toss well, ensuring every piece of chicken is fully submerged and coated in the honey-ginger mixture.

Spread the chicken cubes onto the prepared baking sheet in a single layer, leaving space between the pieces so they roast rather than steam.

Place the baking sheet in the center of the oven and bake for 15 to 18 minutes. The chicken should reach an internal temperature of 165°F and the glaze should be bubbling and golden brown.

While the chicken is roasting, wash 2 stalks of green onions, remove the root ends, and slice the green and white parts into thin rounds.

Remove the chicken from the oven and let it rest for 5 minutes on the pan; this allows the honey glaze to thicken and adhere to the meat.
