For creamier oats, you can soak the steel cut oats overnight in the water portion of the recipe. This cuts the cooking time in half and creates an even silkier texture. If you prefer a more pronounced apple flavor, reserve half the sautéed apples to use as a topping rather than cooking them all into the oatmeal.

Toast 1/2 cup of walnuts in a dry skillet over medium heat for 5-7 minutes, stirring frequently until fragrant and lightly browned. Set aside to cool, then roughly chop.

Core and dice 2 medium apples into 1/2-inch cubes (no need to peel unless preferred).

In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the diced apples, 1 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. Sauté for 3-4 minutes until apples begin to soften.

Add 1 cup of steel cut oats to the pan and toast for 1-2 minutes, stirring constantly to coat with the spiced butter.

Pour in 3 cups of water, 1 cup of milk, and 1/4 teaspoon of salt. Stir well and bring to a gentle boil.
