2.25 cups milk of choice
3/4 cup Greek yogurt
3 tablespoons cream cheese

Finely grate 1 cup of carrots using a box grater and set aside.

Toast 1/2 cup of pecans in a dry skillet over medium heat for 3-5 minutes until fragrant, stirring frequently to prevent burning. Let cool, then roughly chop.

In a medium bowl, mix 1.5 cups of rolled oats, 3 tablespoons of chia seeds, 1.5 teaspoons of cinnamon, 1/4 teaspoon of nutmeg, 1/4 teaspoon of ground ginger, and 1/4 teaspoon of salt.

Add 2.25 cups of milk, 3 tablespoons of maple syrup, and 1.5 teaspoons of vanilla extract to the oat mixture and stir well to combine.

Fold in the grated carrots, 3 tablespoons of raisins, and half of the toasted pecans.

In a separate small bowl, whisk together 3/4 cup of Greek yogurt and 3 tablespoons of softened cream cheese until smooth.
