Chef's Note
For perfectly crisp apple chips, make sure all slices are uniform in thickness. A mandoline is ideal, but a sharp knife works too if you're careful. If your chips aren't crispy enough after cooling, you can return them to a warm (but turned off) oven for 10-15 minutes. These chips will stay crisp for up to 5 days in an airtight container.

1 tablespoon coconut sugar
1 tablespoon lemon juice
2 cups Greek yogurt
1 teaspoon pure vanilla extract
2 tablespoons honey
1/2 pod vanilla bean
1/8 teaspoon ground nutmeg

Preheat oven to 225°F (107°C) and line 2 large baking sheets with parchment paper or silicone baking mats.

Wash and dry 4 large Honeycrisp apples thoroughly.

Using a mandoline slicer set to 1/8-inch thickness, carefully slice the apples into thin rounds. Remove any seeds or tough core pieces.

In a large bowl, combine the apple slices with 1 tablespoon of lemon juice and toss gently to coat (this prevents browning).

In a small bowl, mix 2 teaspoons of ground cinnamon with 1 tablespoon of coconut sugar.

Arrange the apple slices in a single layer on the prepared baking sheets, making sure they don't overlap.

Sprinkle the cinnamon-sugar mixture evenly over the apple slices.

Bake for 1 hour, then flip each slice and continue baking for another 30 minutes, or until the edges curl up and the chips feel dry to the touch.

While the apple chips are baking, prepare the vanilla yogurt dip by combining 2 cups of Greek yogurt with 2 tablespoons of honey in a medium bowl.

Split 1/2 vanilla bean pod lengthwise and scrape the seeds into the yogurt mixture. Add 1 teaspoon of pure vanilla extract and 1/8 teaspoon of ground nutmeg.

Whisk the yogurt mixture until smooth and refrigerate for at least 30 minutes to allow flavors to meld.

Once the apple chips are done, turn off the oven but leave the chips inside with the door slightly ajar for about 10 minutes to crisp up further.
