Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.

In a large bowl, combine rolled oats, baking powder, 1 teaspoon cinnamon, salt, and nutmeg.

In another bowl, whisk together milk, eggs, 1/4 cup maple syrup, and vanilla extract.

Peel, core, and dice one apple into small cubes. Slice the other apple into thin wedges for topping.

Add the diced apple to the oat mixture, then pour in the milk mixture. Stir until well combined.
