Chef's Note
For extra creaminess, try using half-and-half instead of regular milk. You can also prepare the caramelized apples the night before and reheat them gently in the morning to save time. A pinch of nutmeg or cardamom adds wonderful complexity to the spice profile.

Ingredients
1 cup rolled oats
1.5 cups water
1 cup milk (dairy or plant-based)
3 tablespoons honey
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 medium apples
2 tablespoons butter
2 tablespoons brown sugar
1/2 teaspoon vanilla extract
1/3 cup chopped nuts (walnuts or pecans)
Instructions
- 1
Core and dice 2 medium apples into 1/2-inch cubes. Set aside.
- 2
In a medium saucepan, combine 1.5 cups water, 1 cup milk, 1 cup rolled oats, and 1/4 teaspoon salt. Bring to a gentle boil over medium heat.
- 3
Reduce heat to low and simmer for 5-7 minutes, stirring occasionally until oats are tender and the mixture has thickened.
- 4
While the oats cook, melt 2 tablespoons butter in a skillet over medium heat.
- 5
Add the diced apples to the skillet and cook for 3-4 minutes until they begin to soften.
- 6
Sprinkle 2 tablespoons brown sugar over the apples and continue cooking for another 3-4 minutes, stirring occasionally, until the apples are tender and caramelized.
- 7
Add 1/2 teaspoon vanilla extract to the apples and stir to combine. Remove from heat.
- 8
Once the oatmeal is cooked, stir in 2 tablespoons honey and 3/4 teaspoon ground cinnamon.
- 9
Divide the oatmeal among 3 serving bowls.
- 10
Top each bowl with caramelized apples, a drizzle of the remaining 1 tablespoon honey, a sprinkle of the remaining 1/4 teaspoon cinnamon, and about 2 tablespoons of chopped nuts per serving.
- 11
Serve immediately while hot.
