Chef's Note

For extra texture, try adding 1 tablespoon of chopped walnuts or almonds just before serving. You can prepare multiple servings at once for several days of ready-to-eat breakfasts.

Ingredients
  • 1/2 cup rolled oats

  • 3/4 cup skim milk

  • 1/2 cup Greek yogurt, plain

  • 1 medium apple

  • 1/2 teaspoon cinnamon

  • 1 teaspoon maple syrup

  • 1/4 teaspoon vanilla extract

  • 1 teaspoon chia seeds

Instructions
  • 1

Wash the apple thoroughly under cool running water.

  • 2

Core the apple and dice it into small 1/4-inch cubes. Set aside 2 tablespoons for topping.

  • 3

In a mason jar or container with a lid, add 1/2 cup rolled oats, 3/4 cup skim milk, 1/2 cup Greek yogurt, and the remaining diced apple.

  • 4

Add 1/2 teaspoon cinnamon, 1 teaspoon maple syrup, 1/4 teaspoon vanilla extract, and 1 teaspoon chia seeds to the container.

  • 5

Stir all ingredients together until well combined.

  • 6

Seal the container with its lid and place in the refrigerator overnight or for at least 6 hours.

  • 7

In the morning, stir the oatmeal mixture and top with the reserved 2 tablespoons of diced apple.

  • 8

Enjoy cold straight from the refrigerator, or if preferred, warm for 1-2 minutes in the microwave.
