  • 1/2 medium yellow onion

  • 4 cloves garlic

  • 1/2 cup breadcrumbs

  • 1 large egg

  • 1/4 cup milk

  • 1/3 cup ketchup

  • 1 tablespoon Worcestershire sauce

  • 2 tablespoons brown sugar

  • 1 teaspoon apple cider vinegar

  • 1 pound small yellow potatoes

  • 2 tablespoons butter

  • 12 ounces broccoli florets

  • 2 tablespoons olive oil

  • 1/2 medium lemon

  • 1/4 cup parmesan cheese

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

    Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Finely dice 1/2 yellow onion. Mince 2 cloves of garlic for the meatloaf and 2 cloves for the potatoes.

    In a large bowl, combine 1 pound ground beef, diced onion, 2 minced garlic cloves, 1/2 cup breadcrumbs, 1 beaten egg, 1/4 cup milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon dried thyme, and 1/2 teaspoon dried oregano.

    Mix gently with your hands until just combined, being careful not to overmix.

    Shape the meat mixture into a loaf (approximately 8x4 inches) and place on the prepared baking sheet.

    In a small bowl, whisk together 1/4 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon Worcestershire sauce, and 1 teaspoon apple cider vinegar to make the glaze.

    Wash 1 pound small yellow potatoes and cut any larger ones in half so they're all roughly the same size.
