  • 12 oz beef tenderloin center cut

  • 2 sprigs fresh rosemary

  • 3 sprigs fresh thyme

  • 4 cloves garlic cloves

  • 1 tablespoon dijon mustard

  • 1 teaspoon black peppercorns

  • 1.5 teaspoons kosher salt

  • 2 tablespoons olive oil

  • 1 cup dry red wine

  • 1.5 cups beef stock

  • 1 medium shallot

  • 3 tablespoons unsalted butter

  • 1 pound russet potatoes

  • 1/3 cup whole milk

  • 1 teaspoon truffle oil

  • 8 oz brussels sprouts

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon honey

  • 2 tablespoons fresh parsley

    Remove beef tenderloin from refrigerator 1 hour before cooking to bring to room temperature. Pat completely dry with paper towels.

    Preheat oven to 250°F (121°C) and position rack in center of oven.

    Strip leaves from 2 sprigs of rosemary and 3 sprigs of thyme. Finely chop the herbs and set aside.

    Peel and mince 3 garlic cloves. Crush the remaining garlic clove and set aside for the sauce.

    In a small bowl, mix 1 tablespoon Dijon mustard with the minced garlic, chopped herbs, 1 teaspoon crushed black peppercorns, and 1 teaspoon kosher salt.

    Rub the beef tenderloin with the herb-mustard mixture, coating all sides evenly.

    Place an oven-safe wire rack on a rimmed baking sheet. Put the tenderloin on the rack.
