  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons fresh dill

  • 2 tablespoons fresh chives

  • 1 teaspoon lemon zest

  • 1 cup cherry tomatoes

  • 1 teaspoon fresh thyme

  • 2 cloves garlic

  • 2 tablespoons pine nuts

    Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease thoroughly with cooking spray.

    In a small bowl, toss 1 cup cherry tomatoes with 1 tablespoon extra virgin olive oil, 1 teaspoon fresh thyme leaves, and 1/4 teaspoon kosher salt. Spread on a small baking sheet.
