  • 8 oz Brussels sprouts

  • 1/2 cup quinoa

  • 2 tablespoons Dijon mustard

  • 1/2 teaspoon garlic powder

  • 2 tablespoons olive oil

  • 1 cup water

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

    Rinse 1/2 cup quinoa under cold water in a fine mesh strainer. In a small saucepan, combine the rinsed quinoa with 1 cup water and 1/4 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is tender.

    While quinoa cooks, trim the ends off the Brussels sprouts and cut them in half. Place on a baking sheet.

    In a small bowl, whisk together 2 tablespoons Dijon mustard, 1 tablespoon honey, 1/2 teaspoon garlic powder, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.

    Pat the chicken thighs dry with paper towels and place them on the baking sheet next to the Brussels sprouts.

    Brush half of the honey mustard mixture over the chicken thighs, coating them evenly.
