Chef's Note
For an extra-cold smoothie, freeze the banana chunks the night before. You can also prepare freezer packs with all ingredients except the liquid for quick morning prep.

2 cups fresh spinach
1 cup frozen mango chunks
1 cup frozen pineapple chunks
1 medium banana
1 cup coconut water
1/2 fresh lime
1/2 inch fresh ginger
Instructions

Wash 2 cups of fresh spinach thoroughly under cold water and pat dry with paper towels.

Peel 1 medium banana and break into chunks.

Peel 1/2 inch piece of fresh ginger and roughly chop.

Cut 1/2 lime and squeeze to extract the juice.

Add 2 cups fresh spinach to a high-speed blender.

Add 1 cup frozen mango chunks and 1 cup frozen pineapple chunks to the blender.

Add the banana chunks to the blender.

Pour in 1 cup coconut water.

Add the chopped ginger and lime juice to the blender.

Blend on low speed for 30 seconds to break down the greens.

Increase to high speed and blend for 1-2 minutes until completely smooth with no visible green flecks.

If the smoothie is too thick, add 2-4 tablespoons of cold water and blend again.

Taste and adjust sweetness if needed by adding more banana.
