Chef's Note

For a spicier version, use hot Italian sausage instead of mild, or add 1/4 teaspoon red pepper flakes with the dried herbs.

Ingredients
  • 1 pound Italian sausage links

  • 1 medium onion

  • 3 cloves garlic cloves

  • 8 ounces green beans

  • 8 ounces penne pasta

  • 14.5 ounces crushed tomatoes

  • 2 cups chicken broth

  • 1 teaspoon dried basil

  • 1/2 teaspoon dried oregano

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup grated parmesan cheese

Instructions
  • 1

Remove the casings from 1 pound of Italian sausage links and slice into 1/2-inch rounds.

  • 2

Peel and dice 1 medium onion. Peel and mince 3 garlic cloves.

  • 3

Wash 8 ounces of green beans, trim the ends, and cut into 2-inch pieces.

  • 4

Heat 1 tablespoon olive oil in a large pot or deep skillet over medium heat.

  • 5

Add the sliced sausage and cook for 5 minutes until browned on both sides, stirring occasionally.

  • 6

Add the diced onion to the pot and cook for 3 minutes until softened.

  • 7

Add the minced garlic and cook for 30 seconds until fragrant.

  • 8

Pour in 14.5 ounces of crushed tomatoes and 2 cups of chicken broth. Stir to combine.

  • 9

Add 1 teaspoon dried basil, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir well.

  • 10

Add 8 ounces of penne pasta and the cut green beans to the pot. Stir to combine.

  • 11

Bring to a boil, then reduce heat to medium-low. Cover and simmer for 10-12 minutes, stirring occasionally, until pasta is tender and green beans are crisp-tender.

  • 12

If the mixture becomes too dry, add 1/4 cup water as needed.

  • 13

Remove from heat and let stand for 2 minutes.

  • 14

Serve hot, topped with 1/4 cup grated parmesan cheese.
