For extra nutrition, add 2 tablespoons of chopped nuts or a dollop of Greek yogurt on top. You can also prepare this the night before and reheat for 30 seconds in the microwave in the morning.

1 cup dry couscous
1 medium apple
1 teaspoon cinnamon
2 tablespoons honey
1 cup water
1/8 teaspoon salt
Instructions

Bring 1 cup of water to a boil in a small pot or kettle.

While water is heating, wash 1 medium apple and dice it into small cubes (about 1/2 inch pieces).

Place 1 cup dry couscous in a medium bowl and add 1/8 teaspoon salt.

Pour the boiling water over the couscous, stir quickly with a fork, then cover the bowl with a plate or lid.

Let the couscous sit for 5 minutes to absorb the water.

After 5 minutes, remove the cover and fluff the couscous with a fork.

Add the diced apple, 1 teaspoon cinnamon, and 2 tablespoons honey to the couscous.
