Chef's Note
For extra flavor, squeeze a little fresh lemon juice over the avocado before adding the bacon. The acid brightens the flavor and helps prevent the avocado from browning if you need to make it slightly ahead of time.

4 slices whole grain bread
1 large avocado
6 slices bacon
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon red pepper flakes

Line a microwave-safe plate with 2 paper towels. Lay 6 slices of bacon on the paper towels without overlapping. Cover with 2 more paper towels.

Microwave bacon on high for 4-5 minutes until crispy. Start checking at 3 minutes as microwave powers vary.

While bacon cooks, place 4 slices of whole grain bread in the toaster and toast until golden brown.

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

Mash the avocado with a fork until slightly chunky. Add 1/4 teaspoon salt and 1/8 teaspoon black pepper and mix well.

Once toast is ready, spread the mashed avocado evenly over the 4 slices of toast.

When bacon is done, pat excess grease with paper towels and break each slice in half.

Place 3 half-slices of bacon on each piece of avocado toast.
