Chef's Note
For extra flavor without adding complexity, you can use pre-shredded Mexican cheese blend instead of cheddar. These quesadillas can be wrapped in foil to stay warm for on-the-go breakfasts.

4 each large flour tortillas
4 large eggs
1/2 cup shredded cheddar cheese
1/4 teaspoon salt
1/8 teaspoon black pepper

Crack 4 large eggs into a microwave-safe bowl and beat with a fork until well mixed.

Add 1/4 teaspoon salt and 1/8 teaspoon black pepper to the eggs and stir to combine.

Microwave the egg mixture on high for 1 minute. Remove and stir with a fork, breaking up any cooked portions.

Return to microwave and cook for another 30-45 seconds until eggs are fully set but still moist. Stir gently to break into pieces.

Lay out 2 large flour tortillas on a microwave-safe plate.

Distribute the scrambled eggs evenly between the 2 tortillas.

Sprinkle 1/4 cup of shredded cheddar cheese on top of each portion of eggs.

Cover each with another large flour tortilla, pressing down gently.

Microwave one quesadilla at a time for 30 seconds, or until cheese is melted.
