12 oz salmon fillets
10 oz pre-cut mixed vegetables (broccoli, carrots, cauliflower)
2 tsp lemon juice
2 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper
2 sheets parchment paper
8.8 oz microwave-ready brown rice

Place each 6 oz salmon fillet on its own sheet of parchment paper.

Divide the 10 oz pre-cut vegetables equally between the two sheets, placing them alongside the salmon.

Drizzle 1 tsp lemon juice over each salmon fillet.

Drizzle 1 tsp olive oil over each portion of vegetables.

Sprinkle 1/8 tsp salt and 1/8 tsp black pepper over each salmon and vegetable portion.

Fold the parchment paper over the salmon and vegetables and fold the edges to create sealed packets.

Place one packet in the microwave and cook on high for 3 minutes.

While the first packet cooks, prepare the 8.8 oz microwave-ready brown rice according to package directions (typically 90 seconds).

Carefully open the first packet (watch for steam) and check if salmon is opaque throughout. If not, reseal and microwave for an additional 30-60 seconds.
