  • 4 cloves garlic

  • 2 whole lemon

  • 1 medium zucchini

  • 1 large red bell pepper

  • 1 medium red onion

  • 1 cup cherry tomatoes

  • 1 cup uncooked pearl couscous

  • 1.5 cups vegetable broth

  • 1.5 teaspoons salt

  • 1 teaspoon black pepper

    Remove the beef sirloin from the refrigerator 30 minutes before cooking to bring to room temperature. Pat dry with paper towels.

    Preheat the oven to 425°F (220°C).

    Finely chop 1 tablespoon each of fresh rosemary, thyme, and oregano. Mince 3 cloves of garlic.

    In a small bowl, mix the chopped herbs, 2 minced garlic cloves, 1 tablespoon Dijon mustard, 2 tablespoons olive oil, zest of 1 lemon, 1 teaspoon salt, and 1/2 teaspoon black pepper to create the herb crust.
