  • 1.5 pounds salmon fillets

  • 1.5 pounds baby potatoes

  • 1 pound green beans

  • 4 cloves garlic cloves

  • 1 whole lemon

  • 2 tablespoons fresh dill

  • 2 tablespoons fresh parsley

  • 4 tablespoons olive oil

  • 1.5 teaspoons salt

  • 1 teaspoon black pepper

  • 2 tablespoons butter

  • 1 tablespoon dijon mustard

    Preheat the oven to 425°F (220°C).

    Wash 1.5 pounds of baby potatoes and cut any larger ones in half so they're all roughly the same size.

    Place the potatoes on a large baking sheet, drizzle with 2 tablespoons of olive oil, and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat evenly.

    Arrange the potatoes in a single layer and roast for 15 minutes.

    While potatoes are roasting, prepare the salmon. Pat 1.5 pounds of salmon fillets dry with paper towels and place on a plate.

    Return the baking sheet to the oven and bake for 12-15 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
