  • 1.5 pounds boneless, skinless chicken breasts

  • 3 medium bell peppers (mix of red, yellow, green)

  • 1 large yellow onion

  • 3 tablespoons olive oil

  • 1 tablespoon chili powder

  • 2 teaspoons ground cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1.5 teaspoons salt

  • 1 teaspoon black pepper

  • 2 whole lime

  • 1.5 cups long-grain white rice

  • 3 cups chicken broth

  • 2 tablespoons tomato paste

  • 2 ripe avocados

  • 1 cup cherry tomatoes

  • 1/2 cup cilantro

  • 1/4 medium red onion

  • 8 8-inch flour tortillas

    Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Slice the chicken breasts into 1/2-inch strips and place in a large bowl.

    Core and slice the bell peppers into 1/2-inch strips.
