Chef's Note

For the smoothest texture, be sure to whisk the protein powder into the almond milk before adding chia seeds. This prevents clumping that can happen when protein powder is added directly to the hydrated chia mixture. For extra flavor complexity, try toasting the chia seeds in a dry pan for 2-3 minutes before using.

Ingredients
  • 6 tablespoons chia seeds

  • 2 cups almond milk, unsweetened

  • 3 scoops (90g) vanilla whey protein powder

  • 3 tablespoons almond butter

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon

  • 1/8 teaspoon salt

  • 1 tablespoon honey

  • 1 cup strawberries

  • 1/2 cup blueberries

  • 3 tablespoons almonds, raw

  • 1 tablespoon hemp seeds

Instructions
  • 1

In a large mixing bowl, add 2 cups unsweetened almond milk and 3 scoops (90g) vanilla whey protein powder. Whisk thoroughly until the protein powder is completely dissolved with no clumps.

  • 2

Add 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/8 teaspoon salt, and 1 tablespoon honey to the almond milk mixture. Whisk until well combined.

  • 3

Warm 3 tablespoons almond butter slightly in the microwave for 15 seconds to soften. Add to the mixture and whisk until fully incorporated.

  • 4

Add 6 tablespoons chia seeds to the mixture and whisk immediately and vigorously for about 2 minutes to prevent clumping.

  • 5

Let the mixture sit for 5 minutes, then whisk again for 1 minute to break up any clumps that may have formed.

  • 6

Divide the mixture evenly among 3 glass jars or containers with lids.

  • 7

Cover and refrigerate overnight or for at least 6 hours to allow the chia seeds to fully hydrate and the pudding to set properly.

  • 8

When ready to serve, wash 1 cup strawberries and 1/2 cup blueberries. Hull and quarter the strawberries.

  • 9

Toast 3 tablespoons raw almonds in a dry skillet over medium heat for 3-5 minutes, tossing frequently until fragrant and lightly golden. Allow to cool, then roughly chop.

  • 10

Top each pudding with equal portions of the prepared berries, toasted chopped almonds, and sprinkle 1 teaspoon hemp seeds over each serving.

  • 11

Serve immediately, or cover and refrigerate for up to 2 days.
