  • 2 tablespoons coconut oil

    Begin by making the berry compote. In a medium saucepan, combine 2 cups mixed berries, 1 tablespoon lemon juice, and 1 tablespoon maple syrup.

    Bring the berry mixture to a simmer over medium heat and cook for 8-10 minutes, stirring occasionally and gently mashing some of the berries with the back of a spoon to release their juices. The compote should thicken slightly but still have whole berries throughout.

    Once thickened, remove the compote from heat and set aside to cool slightly while preparing the pancakes.

    Roughly chop 1/3 cup walnuts and set aside.

    In a large mixing bowl, mash 2 medium ripe bananas until smooth with minimal lumps.
