Chef's Note

For extra richness, you can substitute half the milk with heavy cream when making the polenta. If you're short on time in the morning, the polenta can be made the night before and reheated with a splash of milk or broth while stirring.

Ingredients
  • 1 pint cherry tomatoes

  • 4 sprigs fresh thyme

  • 1 sprig fresh rosemary

  • 2 cloves garlic

  • 3 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup cornmeal (polenta)

  • 2 cups milk

  • 2 cups chicken broth

  • 2 tablespoons butter

  • 1/3 cup parmesan cheese

  • 6 large eggs

  • 1 tablespoon white vinegar

  • 2 tablespoons chives

Instructions
  • 1

    Preheat oven to 400°F (200°C).

  • 2

Wash the cherry tomatoes and pat dry. Place them on a baking sheet.

  • 3

Rinse the thyme and rosemary sprigs. Remove the leaves from the stems and roughly chop.

  • 4

Peel and mince 2 cloves of garlic.

  • 5

In a small bowl, mix 2 tablespoons olive oil with the minced garlic, chopped thyme, chopped rosemary, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

  • 6

Pour the herb mixture over the tomatoes and toss to coat evenly.

  • 7

Roast the tomatoes in the preheated oven for 15-20 minutes until they begin to burst and caramelize.

  • 8

While the tomatoes are roasting, prepare the polenta. In a medium saucepan, combine 2 cups milk and 2 cups chicken broth and bring to a gentle simmer over medium heat.

  • 9

Slowly whisk in 1 cup cornmeal, stirring continuously to prevent lumps.

  • 10

Reduce heat to low and cook, stirring frequently, for about 15-18 minutes until the polenta is thick and creamy.

  • 11

Remove polenta from heat and stir in 2 tablespoons butter, 1/3 cup grated parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cover to keep warm.

  • 12

For the poached eggs, fill a large, wide pot with about 3 inches of water. Add 1 tablespoon white vinegar and bring to a gentle simmer (small bubbles around the edges, not a rolling boil).

  • 13

Crack each egg into a small cup or ramekin.

  • 14

Create a gentle whirlpool in the water with a spoon, then carefully slide one egg into the center of the whirlpool.

  • 15

Cook for 3 minutes for a runny yolk, then remove with a slotted spoon and place on a paper towel to drain. Repeat with remaining eggs, cooking 1-2 at a time.

  • 16

Rinse and chop 2 tablespoons fresh chives.

  • 17

To serve, divide the polenta among 3 bowls (about 1 cup per bowl).

  • 18

Top each bowl with 2 poached eggs and a portion of the roasted tomatoes.

  • 19

Drizzle with the remaining 1 tablespoon olive oil, sprinkle with chopped chives, and add additional salt and pepper to taste.
