You can blend the batter and prepare the compote the night before for a quicker morning. Just store them separately in the refrigerator and reheat the compote gently before serving. For extra protein, add a tablespoon of your favorite protein powder to the batter.

  • 1 cup cottage cheese

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 2 cups mixed berries (strawberries, blueberries, raspberries)

  • 1 tablespoon lemon juice

  • 2 tablespoons honey

  • 2 tablespoons coconut oil

    Add 1 cup rolled oats to a blender and pulse until they reach a flour-like consistency.

    Add 1 cup cottage cheese, 4 large eggs, 1 teaspoon vanilla extract, 1 teaspoon baking powder, and 1/2 teaspoon cinnamon to the blender. Blend until smooth, about 30-60 seconds.

    Let the batter rest for 5 minutes to thicken slightly.

    Meanwhile, prepare the berry compote. Add 2 cups mixed berries to a small saucepan over medium heat.

    Add 1 tablespoon lemon juice and 1 tablespoon honey to the berries. Stir gently.

    Simmer the berry mixture for 5-7 minutes, stirring occasionally, until berries break down and sauce thickens slightly. Remove from heat.
