Chef's Note
For a spicier version, add a diced jalapeño with the bell pepper or use pepper jack cheese instead of cheddar. You can also top with fresh cilantro or sliced green onions for extra flavor.

1 pound ground beef
1 medium yellow onion
1 medium bell pepper
2 cloves garlic
1 packet taco seasoning
1 can (14.5 oz) diced tomatoes
8 oz penne pasta
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil

Bring a large pot of salted water to a boil. Add 8 oz of penne pasta and cook according to package directions until al dente, usually 8-10 minutes. Drain and set aside.

While pasta is cooking, dice 1 medium yellow onion and 1 medium bell pepper. Mince 2 cloves of garlic.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add 1 pound of ground beef to the skillet and cook for 5-6 minutes, breaking it up with a wooden spoon until browned.

Add the diced onion and bell pepper to the skillet. Cook for 3-4 minutes until vegetables begin to soften.

Add minced garlic and cook for 30 seconds until fragrant.

Sprinkle 1 packet of taco seasoning over the meat mixture and stir to combine.

Pour in the 14.5 oz can of diced tomatoes with their juice. Stir to combine and bring to a simmer.

Add the cooked pasta to the skillet and stir to coat with the sauce. Cook for 2 minutes to allow flavors to meld.

Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, adjusting to taste.

Sprinkle 1 cup of shredded cheddar cheese over the top. Cover the skillet for 1-2 minutes until the cheese melts.
