  • 2 slices day-old sourdough bread

  • 2 large egg

  • 1/4 cup milk

  • 1/4 cup gruyere cheese

  • 1/2 cup cherry tomatoes

  • 1 cup baby spinach

  • 1 teaspoon fresh thyme

  • 1 tablespoon fresh chives

  • 1 clove garlic

  • 1 tablespoon olive oil

  • 1 teaspoon dijon mustard

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

    Preheat oven to 375°F (190°C).

    Cut the 2 slices of day-old sourdough bread into 1-inch cubes and set aside.

    Wash and halve 1/2 cup of cherry tomatoes.

    Rinse 1 cup of baby spinach and pat dry.

    Mince 1 clove of garlic.

    Finely chop 1 tablespoon of fresh chives and remove leaves from 1 teaspoon of fresh thyme stems.

    In a small skillet, heat 1/2 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

    Add the spinach and cook for 1-2 minutes until just wilted. Remove from heat and set aside.
