Chef's Note
For extra flavor, marinate the chicken in 2 tablespoons of the BBQ sauce for 30 minutes before cooking. You can also use a rotisserie chicken to save time - just shred it and toss with a bit of BBQ sauce before adding to the pizza.

3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 large yellow onion
1 medium red bell pepper
1 medium green bell pepper
3/4 cup BBQ sauce
1 pound pre-made pizza dough
2 tablespoons cornmeal
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1/4 cup fresh cilantro

Preheat the oven to 450°F (230°C). If you have a pizza stone, place it in the oven while preheating.

Season 1 pound of chicken breasts with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon garlic powder.

Heat a skillet over medium-high heat. Add the seasoned chicken and cook for 6-7 minutes per side until the internal temperature reaches 165°F (74°C).

Remove the chicken from the skillet and let it rest for 5 minutes before shredding with two forks. Set aside.

In the same skillet, add 1 tablespoon olive oil. Slice the large yellow onion thinly and add to the pan. Cook over medium-low heat for 10-12 minutes, stirring occasionally until caramelized and golden brown.

While the onions are cooking, slice the red and green bell peppers into thin strips. Once the onions are caramelized, add the bell peppers to the skillet with the remaining 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon garlic powder. Cook for an additional 5-6 minutes until peppers are softened but still slightly crisp.

Sprinkle cornmeal on a large baking sheet or pizza peel. On a lightly floured surface, roll out the pizza dough to a 14-inch circle (or shape of your preference). Transfer to the cornmeal-dusted surface.

Brush the dough with 1 tablespoon olive oil, then spread 1/2 cup BBQ sauce evenly over the dough, leaving a 1/2-inch border for the crust.

Sprinkle 1 cup of mozzarella cheese over the sauce, then evenly distribute the shredded chicken, caramelized onions, and bell peppers.

Top with the remaining 1 cup mozzarella and 1 cup cheddar cheese.

Carefully transfer the pizza to the preheated oven (on the pizza stone if using, or on the baking sheet). Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.

Remove from the oven and drizzle with the remaining 1/4 cup BBQ sauce. Sprinkle with 1/4 cup chopped fresh cilantro.
