1 tablespoon olive oil
1/3 cup dried cranberries
1/3 cup dried apricots
1/4 cup dark chocolate chips
1/2 teaspoon cinnamon
1 tablespoon maple syrup
1/4 teaspoon salt

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

Drain and rinse 1 can of chickpeas, then thoroughly pat dry with paper towels, removing any loose skins.

In a medium bowl, toss the dried chickpeas with 1 tablespoon olive oil, 1/2 teaspoon cinnamon, 1 tablespoon maple syrup, and 1/4 teaspoon salt until evenly coated.

Spread the seasoned chickpeas in a single layer on the prepared baking sheet.

Bake for 18-20 minutes, stirring halfway through, until the chickpeas are golden brown and crispy.

Remove from oven and let cool completely on the baking sheet (about 10 minutes).

While chickpeas are cooling, chop 1/3 cup dried apricots into small pieces, about the size of the cranberries.

Transfer the cooled chickpeas to a large bowl and add 1/3 cup dried cranberries, the chopped dried apricots, and 1/4 cup dark chocolate chips.
