Chef's Note
You can use any leftover cooked chicken for this recipe. For a vegetarian option, replace the chicken with a can of drained and rinsed chickpeas mashed with a fork.

2 cups rotisserie chicken
3 cups romaine lettuce
1/4 cup Caesar dressing
1 cup cherry tomatoes
1/2 medium cucumber
1/4 cup grated Parmesan cheese
4 whole wheat pita pockets
1/4 teaspoon black pepper

Shred or dice 2 cups of rotisserie chicken into small, bite-sized pieces.

Wash and chop 3 cups of romaine lettuce into thin strips.

Wash and slice 1 cup of cherry tomatoes in half.

Peel 1/2 cucumber and dice into small cubes.

In a large bowl, combine the chicken, romaine lettuce, cherry tomatoes, and cucumber.

Add 1/4 cup of Caesar dressing and toss until all ingredients are well coated.

Sprinkle 1/4 cup of grated Parmesan cheese and 1/4 teaspoon of black pepper over the mixture and gently toss again.

Cut the tops off 4 whole wheat pita pockets to create an opening (or open along one side if pre-cut).

Divide the chicken Caesar mixture evenly among the 4 pita pockets.
