Chef's Note
For a spicier version, add a diced jalapeño with the bell pepper or use pepper jack cheese instead of the Mexican blend. These wraps also freeze well for up to 3 months - just wrap individually in foil and freeze before the baking step.

2 cups leftover cooked turkey
1 cup enchilada sauce
4 each large flour tortillas
1 cup shredded Mexican cheese blend
1 medium bell pepper
1/2 medium red onion
1 teaspoon ground cumin
1/2 teaspoon chili powder
1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 375°F (190°C).

Dice 1 medium bell pepper and 1/2 medium red onion into small pieces.

Heat 1 tablespoon vegetable oil in a large skillet over medium heat.

Add the diced bell pepper and red onion to the skillet. Cook for 3-4 minutes until softened.

Add 2 cups shredded leftover turkey to the skillet.

Sprinkle 1 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper over the mixture. Stir well to combine.

Pour 1/2 cup of the enchilada sauce into the skillet and stir to coat the turkey mixture. Cook for 2-3 minutes until heated through.

Lay out the 4 large flour tortillas on a clean surface.

Divide the turkey mixture evenly among the tortillas, placing it in a line down the center of each tortilla.

Sprinkle 1/2 cup of the shredded cheese evenly over the turkey mixture on all tortillas.

Fold in the sides of each tortilla, then roll them up tightly to form wraps.

Place the wraps seam-side down in a baking dish.

Pour the remaining 1/2 cup of enchilada sauce over the wraps and sprinkle with the remaining 1/2 cup of cheese.

Bake in the preheated oven for 10 minutes, until the cheese is melted and the wraps are heated through.
