Chef's Note
The mayonnaise creates an incredibly crispy exterior on the chicken while keeping the meat juicy. For extra flavor, you can add dried herbs like thyme or rosemary to the potato seasoning.

Ingredients
8 pieces chicken drumsticks
1/3 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 pounds baby potatoes
2 tablespoons olive oil
12 ounces fresh green beans
1 whole lemon
Instructions
- 1
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
- 2
Pat the chicken drumsticks dry with paper towels.
- 3
In a large bowl, mix 1/3 cup mayonnaise, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- 4
Add the chicken drumsticks to the mayonnaise mixture and coat them thoroughly.
- 5
Place the coated drumsticks on one side of the prepared baking sheet.
- 6
Wash and halve the baby potatoes. Place them in a bowl and toss with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- 7
Arrange the potatoes on the other side of the baking sheet, cut side down.
- 8
Place the baking sheet in the oven and bake for 30 minutes.
- 9
Meanwhile, trim the ends of the green beans and wash them.

After 30 minutes, remove the baking sheet from the oven. Add the green beans to the center of the baking sheet, drizzle with 1 tablespoon olive oil, and season with a pinch of salt and pepper.
- 11
Return the baking sheet to the oven and bake for an additional 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
- 12
Cut the lemon into wedges.
- 13
Serve the chicken drumsticks with the roasted potatoes and green beans, with lemon wedges on the side for squeezing over the chicken and vegetables.
