Chef's Note
For extra flavor, try adding a pinch of smoked paprika to the tuna mixture. If you prefer a lighter version, you can toast the bread in a toaster and melt the cheese under the broiler instead of pan-frying with butter.

12 oz canned tuna
1/3 cup mayonnaise
2 tablespoons ketchup
1 stalk celery
1/4 cup red onion
1 tablespoon lemon juice
1/2 teaspoon dried dill
1/4 teaspoon black pepper
1/4 teaspoon salt
8 slices cheddar cheese
8 slices whole grain bread
2 tablespoons butter
4 medium carrots

Drain the 12 oz of canned tuna and place in a medium bowl.

Finely dice 1 stalk of celery and 1/4 cup of red onion.

Add the diced celery, red onion, 1/3 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon lemon juice, 1/2 teaspoon dried dill, 1/4 teaspoon black pepper, and 1/4 teaspoon salt to the tuna. Mix well until combined.

Lay out 8 slices of whole grain bread on a clean work surface.

Divide the tuna mixture evenly among 4 slices of bread, spreading it to the edges.

Place 2 slices of cheddar cheese on top of each tuna-topped bread slice.

Top with the remaining bread slices to form 4 sandwiches.

Melt 2 tablespoons of butter in a large skillet over medium heat.

Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

While the sandwiches are cooking, wash and peel 4 medium carrots.

Cut the carrots into sticks about 3 inches long and 1/4 inch thick.
