Chef's Note

For a time-saving option, prepare the oatmeal and toast the nuts the night before, then reheat the oatmeal slightly in the morning. The yogurt base can be layered with toppings just before serving for optimal freshness. For a flavor variation, try adding a touch of orange zest to the honey before drizzling.

Ingredients
  • 3 cups full-fat Greek yogurt

  • 1 cup old-fashioned rolled oats

  • 1 cup milk

  • 3 tablespoons chia seeds

  • 3 tablespoons honey

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1 cup strawberries

  • 1 cup blueberries

  • 1 large banana

  • 2 medium kiwi

  • 1/3 cup almonds

  • 1/3 cup walnuts

  • 2 tablespoons flaxseeds

Instructions
  • 1

In a medium saucepan, combine 1 cup of rolled oats and 1 cup of milk. Bring to a gentle simmer over medium heat.

  • 2

Reduce heat to low and cook for 8-10 minutes, stirring occasionally until the oats are tender and have absorbed most of the liquid.

  • 3

Remove from heat and stir in 1 teaspoon of cinnamon and 1 teaspoon of vanilla extract. Let cool for 5-7 minutes.

  • 4

While the oats are cooling, wash and prepare the fruit: hull and quarter 1 cup of strawberries, rinse 1 cup of blueberries, peel and slice 1 large banana, and peel and slice 2 medium kiwis.

  • 5

In a dry skillet over medium-low heat, toast 1/3 cup almonds and 1/3 cup walnuts for 4-5 minutes, stirring frequently until fragrant and lightly browned. Remove from heat and let cool.

  • 6

In a small bowl, combine 3 tablespoons of chia seeds and 2 tablespoons of flaxseeds.

  • 7

To assemble each bowl, place 1 cup of Greek yogurt in the bottom of each serving bowl.

  • 8

Top each bowl with one-third of the cooled oatmeal mixture, creating a layer on top of the yogurt.

  • 9

Arrange one-third of the prepared fruit artfully on top of each bowl.

  • 10

Sprinkle each bowl with one-third of the toasted nuts and seed mixture.

  • 11

Drizzle 1 tablespoon of honey over each bowl just before serving.
