Chef's Note

For the best flavor, look for cold-smoked salmon rather than hot-smoked. Cold-smoked has a silkier texture and more delicate flavor that pairs beautifully with the creamy avocado and tangy cream cheese. You can prepare the cream cheese mixture up to 2 days ahead and store in the refrigerator, just bring to room temperature before assembling.

Ingredients
  • 3 large avocados, ripe but firm

  • 6 oz cream cheese, softened

  • 2 tablespoons fresh dill, chopped

  • 1 medium lemon

  • 6 oz smoked salmon

  • 1 tablespoon capers, drained

  • 2 tablespoons red onion, finely diced

  • 1/4 cup cucumber, finely diced

  • 3 medium radishes, thinly sliced

  • 1/4 teaspoon black pepper, freshly ground

  • 1/4 teaspoon sea salt

  • 1 tablespoon everything bagel seasoning

Instructions
  • 1

Remove the cream cheese from the refrigerator 30 minutes before starting to soften.

  • 2

Wash and dry all fresh produce. Finely chop 2 tablespoons of fresh dill, finely dice 2 tablespoons of red onion, and finely dice 1/4 cup of cucumber. Thinly slice 3 radishes.

  • 3

Zest half of the lemon and then cut the lemon in half. Squeeze 1 tablespoon of juice from one half and reserve the other half for serving.

  • 4

In a medium bowl, combine 6 oz softened cream cheese, 2 tablespoons chopped dill, 1 tablespoon lemon juice, lemon zest, 1/4 teaspoon sea salt, and 1/4 teaspoon black pepper. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth.

  • 5

Cut the 3 avocados in half lengthwise and remove the pits. If needed, slice a small portion off the bottom of each avocado half so they sit flat without wobbling.

  • 6

Using a spoon, carefully scoop out some of the avocado flesh from each half, creating a deeper well while leaving a 1/2-inch border. Roughly chop the scooped avocado and set aside.

  • 7

Sprinkle the avocado boats with a small pinch of salt to enhance flavor.

  • 8

Fill each avocado boat with the dill cream cheese mixture, dividing it evenly among the 6 halves.

  • 9

Layer 1 oz of smoked salmon on top of each cream cheese-filled avocado boat, folding or arranging it decoratively.

  • 10

Sprinkle each boat with the diced cucumber, red onion, capers, and the reserved chopped avocado.

  • 11

Top with sliced radishes and sprinkle with everything bagel seasoning.

  • 12

Serve immediately with lemon wedges on the side for additional brightness if desired.
