Chef's Note
For a flavor boost, try using a combination of ground beef and Italian sausage. If you prefer a spicier dish, add a pinch of red pepper flakes or a diced jalapeño with the bell pepper. This dish reheats beautifully, making it perfect for meal prep or next-day lunches.

Ingredients
1 pound lean ground beef
1 medium, diced yellow onion
3 cloves, minced garlic
1 medium, diced bell pepper
12 ounces rotini pasta
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
2 cups beef broth
1 tablespoon Italian seasoning
1 teaspoon paprika
1 tablespoon Worcestershire sauce
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 tablespoons, chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
- 1
Heat a large, deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it up with a wooden spoon as it cooks.
- 2
Add the diced onion and bell pepper to the skillet. Cook for 3-4 minutes until the vegetables begin to soften.
- 3
Stir in the minced garlic and cook for another 30 seconds until fragrant.
- 4
Add the Italian seasoning, paprika, salt, and black pepper. Stir to combine with the meat mixture.
- 5
Pour in the diced tomatoes with their juice, tomato sauce, beef broth, and Worcestershire sauce. Stir to combine all ingredients.
- 6
Add the uncooked pasta to the skillet, making sure it's submerged in the liquid. Bring the mixture to a boil, then reduce heat to medium-low.
- 7
Cover the skillet and simmer for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- 8
Remove the skillet from heat. Sprinkle the cheddar and mozzarella cheeses evenly over the top of the pasta mixture.
- 9
Cover the skillet again and let stand for 2-3 minutes until the cheese is melted.
- 10
Garnish with fresh chopped parsley before serving.
