  • 1 medium yellow onion

  • 4 large garlic cloves

  • 2 15-oz cans cannellini beans

  • 1 cup chicken broth

  • 1 14.5-oz can diced tomatoes

  • 2 sprigs fresh rosemary

  • 2 sprigs fresh thyme

  • 8 cups baby spinach

  • 1 medium lemon

  • 1 loaf store-bought focaccia bread

  • 3 tablespoons olive oil

  • 1/2 teaspoon red pepper flakes

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 cup grated parmesan cheese

    Preheat oven to 350°F (175°C).

    Dice the yellow onion and mince the 4 garlic cloves, setting aside 1 minced clove for the focaccia.

    Remove sausage from casings and break into small chunks.

    Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat. Add sausage and cook for 5-6 minutes until browned, breaking it up with a wooden spoon.

    Add diced onion to the skillet and cook for 3-4 minutes until softened.

    Add 3 minced garlic cloves and red pepper flakes, cooking for 1 minute until fragrant.

    While the skillet is simmering, prepare the focaccia: Slice the focaccia loaf horizontally. Mix the remaining 1 tablespoon olive oil with the reserved minced garlic clove and remaining rosemary leaves finely chopped. Brush this mixture over the cut sides of the focaccia.

    Place focaccia on a baking sheet and bake for 8-10 minutes until lightly crisp and golden.

    For the spinach: In a separate large pan, heat 1 teaspoon olive oil over medium heat. Add remaining minced garlic clove and cook for 30 seconds until fragrant.

    Add the baby spinach in batches, tossing with tongs until wilted, about 2-3 minutes total. Season with remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper.
